Ingredients
  

  • 3 ripe bananas mashed
  • 2 large eggs
  • 1/2 cup greek yogurt plain, full-fat
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup melted butter
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chopped walnuts or dark chocolate chips (optional)
  • 1/4 cup walnuts chopped
  • 2 tbsp brown sugar
  • 2 tbsp rolled oats
  • 1 tbsp olive oil or butter
  • 1/2 tsp cinnamon

Instructions
 

  • Preheat and PreparePreheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  • Mix Wet IngredientsIn a large bowl, whisk together mashed bananas, eggs, yogurt, brown sugar, maple syrup, vanilla, and olive oil until smooth and well combined.
  • Add Dry IngredientsIn a separate bowl, mix flour, baking soda, salt, and cinnamon. Slowly fold the dry ingredients into the wet batter. Don’t overmix—just combine until no flour streaks remain.
  • Optional Add-InsFold in chopped walnuts or chocolate chips if using.
  • Make the StreuselIn a small bowl, stir together the walnut streusel ingredients until crumbly.
  • Assemble and BakePour the batter into your prepared loaf pan. Sprinkle the streusel mixture evenly on top. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and EnjoyLet the loaf cool in the pan for 10 minutes before transferring to a wire rack. Serve warm with a pat of butter or enjoy plain with your morning coffee!
